Tzatziki Sauce:
2 mashed avocados
2 tbl dairy free sour cream
1 tbl lemon juice
1 tbl dill
1 clove garlic
salt and pepper

Combine all ingredients well.

Salmon:
Lemon pepper seasoning
Balsamic vinegar
Olive oil

Heat oven to 375 degrees. Heat pan on medium high with oil and vinegar. Season salmon and sear on each side for about 3 minutes. Remove salmon from pan, then bake in the oven for 20 minutes.

Cauliflower rice:
1 head of cauliflower in food processor or
1 bag Trader Joe’s cauliflower rice
1 vine ripened tomato
1 tablespoon chili powder
1 tablespoon garlic
1/2 lime
Olive oil
S&P to taste

Sauté garlic on medium until fragrant, careful not to burn. Add chili powder, tomato and cauliflower to the pan. Cook for approx 4 minutes and finish with s&p to taste with a squeeze of lime juice.
